Green Beans with Spiced Breadcrumbs (side) - 4 servings - 4 Pts+ per serving
-uses green beans on sale $1.29/lb
Directions:
  1. Preheat oven to 350 deg F. On a small rimmed baking sheet, toss 1 cup breadcrumbs, 2 tbsp extra-virgin olive oil, 1/4 tsp paprika, and a pinch of cayenne pepper. Season with coarse salt and ground pepper. Bake until golden and crisp, 5 to 7 min.
  2. Meanwhile, set a steamer basket in a saucepan with 2 inches of simmering water. Add 1 pound green beans, trimmed, cover, and steam until crisp-tender, about 3 min. In a medium bowl, toss beans with 1 tbsp olive oil. Season with salt and pepper and top with breadcrumbs.

Some lunch sandwich ideas for lunch from April Whole Living (* means on sale):
  • Nut butter, apple slices*, and honey on arnold multigrain bread (last week)
  • Crisp prosciutto (or light bacon), tomato, avocado*, and lettuce on arnold sandwich thin
  • Low fat cottage cheese* (yellow adv buy), blackberries (driscoll cpn), and cinnamon on whole wheat bagel (or arnold bread)
  • Fresh ricotta, strawberries*, honey, and black pepper on whole grain bread
  • Refried black beans, low fat cottage cheese*, avocado*, pickled jalapenos, and fresh cilantro on a whole wheat wrap
