WW Friendly Meals from Publix Sales 3/3


The good news: the weather is gorgeous here in the south! It's early March but it's warm and everything's in bloom and I love it! If you're in the north and still covered in a blanket of snow... sorry! :-)

The bad news: Not a lot of good sale items this week at Publix :-( It's a good week for couponers to check their stockpiles. I guess after 2 weeks of Italian Days, Publix is trying to recoup some loss of revenue! There are, however, plenty of cheap lunch items this week like Boca products, sandwiches, lean cuisines, and items for sides/snacks.

WW Friendly Meals from Publix Sales 2/25


Yes, I am alive and posting! Slight delay in posting meal ideas this week, I took the earlier part of this week off from work to completely renovate my closet. No more 1950's closet with 1 rod and 1 shelf! Now it's painted a beautiful aqua blue with white rubbermaid closet system organization. And yes... it is awesome :-D

But enough about me, on with the food! Publix Italian Days are still going on with many of the same things on sale like pasta sauce, pasta, salad, canned veggies, canned tomato products, and shrimp. So you can still use some of the recipes from last week or do something more basic like spaghetti. What's new this week is the four "Buy Theirs, Get Ours Free" items: Organic Balsamic Vinegar, Organic Salsa, Organic Ketchup, and Organic Canned Tomatoes. There are $1/1 coupons online for the balsamic vinegar and salsa (Newman's Own) as well as Publix & printable cpns for the Muir Glen canned tomatoes. If you're trying to eat more organic products, now is the time to stock up! The only other difference is the chicken on sale, so my recipes this week will focus mainly on those 2 ingredients.

Braised Chicken Thighs with Tomatoes and Green Olives - 6 Pts+ per serving - 4 servings
Ingredients:
  • 4 (1/4 lb) skinless, boneless chicken thighs**
  • 2/3 cup reduced sodium chicken broth**
  • 3 plum tomatoes, chopped
  • 1 onion, thinly sliced
  • 1/3 cup halved, pitted green olives
Directions:
  1. Spray large nonstick skillet with Pam** and set over medium heat. Add chicken and cook until lightly browned, about 3 minutes per side.
  2. Add broth, tomatoes, onion, and olives; bring to boil. Reduce heat and simmer, uncovered, until veggies are tender and chicken is cooked through, about 6 minutes.

Chinese Style Barbecued Chicken - 6 Pts+ per serving - 6 servings
Ingredients:
  • 1 small onion, finely chopped
  • 1/3 cup ketchup**
  • 2 tbsp sugar
  • 2 tbsp hoisin sauce
  • 2 tbsp reduced sodium soy sauce
  • 2 tbsp dry sherry or vermouth
  • 2 garlic cloves, minced
  • 6 (1/2 lb) chicken leg quarters**
Directions:
  1. Preheat oven to 400 deg F. Line shallow pan with nonstick foil
  2. Stir all ingredients except chicken together in a large bowl. Add chicken and toss to coat evenly.
  3. Place chicken in prepared baking pan; brush any remaining sauce over chicken. Cover pan with foil; bake 20 min. Remove foil, and bake until chicken if glazed and cooked through, about 20 min longer.

MahiMahi with Coconut Curry Sauce - 4 Pts+ per serving - 4 servings
Ingredients:
  • 4 (5 oz) pieces mahimahi fillet**
  • 2 tbsp fresh lime juice
  • 2 tbsp Thai red curry paste, or to taste
  • 2 bell peppers, assorted colors**
  • 1/2 cup light coconut milk
Directions:
  1. Spray 8x12 in glass baking dish with Pam**. Sprinkle fillets with 1/4 tsp salt and add to dish. Whisk together lime juice and curry paste in small bowl; pour over fillets. Turn fillets to coat and refrigerate 20-30 min
  2. Preheat oven to 350 deg F. Scatter bell peppers over fillets and add coconut milk. Cover dish tightly with foil and bake until fillets are opaque in center, about 20 min.

  • 1 tbsp extra virgin olive oil
  • 1 small yellow onion, thinly sliced (1 cup)
  • 2 cups frozen spinach from two 10-oz pkgs, thawed and squeezed
  • coarse salt and ground pepper
  • 2 cups egg beaters
  • 1/2 cup part-skim ricotta
Directions:
  1. Preheat oven to 425 deg F. In a 10-in ovenproof nonstick skillet, heat oil over medium-high. Add spinach and onion, season with salt and pepper, and cook for about 5 minutes
  2. Add egg beaters and ricotta, season with salt and pepper, and stir to combine. Cook, undisturbed, until edges are set, about 2 minutes. Transfer skillet to oven and bake until top of frittata is just set, 10 to 13 minutes. Invert or slide frittata onto a plate and cut into 6 wedges. Serve warm or at room temperature
Sriracha Marina and Meatballs - 8 servings - 13 Pts+ per serving (use 2 lbs ground turkey or lean beef instead of pork for less pts)
Ingredients (for the meatballs):
  • 1 lb ground pork
  • 1 lb ground white meat turkey
  • 2 pkgs 10-oz frozen spinach, thawed and squeezed dry
  • 1/3 cup plain dried breadcrumbs
  • 2 large egg whites
  • 3/4 tsp dried oregano
  • coarse salt and ground pepper
  • nonstick cooking spray
Ingredients (for the sauce):
  • 2 tsp extra virgin olive oil
  • 1 small yellow onion, diced small
  • 2 garlic cloves, roughly chopped
  • 2 cans (28 oz each) crushed tomatoes
  • 1/4 cup Sriracha sauce (hot sauce w/ rooster on the bottle)
  • 1 lb spaghetti or other long pasta
  • 1/2 cup fresh parsley leaves, roughly chopped, for serving
Directions:
  1. Heat broiler, with rack in top position. Place pork, turkey, spinach, breadcrumbs, egg whites, oregano, 1.5 tsp salt, and 1/2 tsp pepper in a large bowl. With your hands, mix to combine; roll into 40 one inch meatballs. Arrange meatballs on a rimmed baking sheet. Lightly coat with cooking spray. Broil until golden brown, 10 minutes, rotating sheet halfway through.
  2. In a large heavy pot, heat oil over medium. Add onion and garlic and cook, stirring occasionally, until onion is translucent, 6 min. Add tomatoes and Sriracha and bring to a simmer. Add meatballs and simmer 10 min. To store, let cool then refrigerate in an airtight container, up to 1 week, or freeze, up to 3 months.
  3. In a large pot of boiling salted walter, cook pasta according to package instructions. Drain pasta, add to pot with sauce and meatballs, and toss to coat. Sprinkle with parsley and serve.

French Style Roast Chicken (from cookbook in deluxe membership kit)
Level : Basic (I beg to differ!); Prep: 15 min (also beg to differ); Roast: 1 hr 10 min; Servings: 6
8 Pts+ per serving (1/6 chicken and 2/3 cup veggies)
Ingredients:
  • 2 tsp herbs de Provence (not sure what this is, I'm assuming a mix of dried herbs?)
  • Grated zest of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 (3.5 lb) roasting chicken, giblets removed
  • 1 lemon, halved
  • 1/2 bunch rosemary or thyme
  • 1.5 lbs large red potatoes, scrubbed and cut into sixths
  • 1 large tomato, coarsely chopped
Directions:
  1. Preheat oven to 400 deg F. Place rack in roasting pan and spray with nonstick spray.
  2. Stir together herbs de Provence, lemon zest, garlic, oil, 1/2 tsp salt, and 1/4 tsp pepper in a cup. Gently loosen skin from breast and thighs of chicken; spread herb paste on mest under skin. Put lemon and rosemary inside cavity. Tuck wings under and the legs together with kitchen string. Place chicken, breast side up, on prepared rack.
  3. Roast chicken until instant rad thermometer inserted into thigh (not touching bone) registers 180 deg F, about 1 hour 10 minutes. ABout 45 minutes before roasting time is up, scatter potatoes and tomato around chicken; sprinkle with remaining 1/2 tsp salt and 1/4 tsp pepper; roast until tender.
  4. Remove chicken from oven and let stand 10 minutes. Remove lemon and rosemary from cavity; discard. Carve chicken and serve with potatoes and tomato. Remove chicken skin before eating.

Publix Sale Meal Ideas 2/2 - Part 2


Normally I do all my grocery shopping on the weekend, but I decided to stop by Publix on the way home because a) I had a good coupon expiring today and b) after applying to one arm, my dove deodorant fell apart. Thankfully I had a backup travel size suave powder fresh, but I had one pit smelling like dove and the other like powder fresh all day long - don't you hate mornings like that??

But the good news is I saw some more sales which gave me more dinner ideas, plus I scored some free deodorant. Hey, we WW chicks have to exercise which makes deodorant a necessity (well.. at least highly recommended if you have a gym membership!), so I think this deal qualifies for "healthy living"...

Orange and Honey-Marinated Chicken
Level: Basic - Prep: 20 min - Broil: 25 min - Servings: 6
Ingredients:
  • grated zest of 1 orange
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 (6 oz) bone-in chicken breasts
  • 3 cups hot cooked whole wheat couscous
  • 1 (11 oz) can mandarin orange segments in juice, drained
  • 1/4 cup dried currants
Instructions:
  1. Combine orange zest and juice, lime juice, honey, salt, and pepper in large zip-close plastic bag; add chicken. Squeeze out air and seal bag; turn to coat chicken. Refrigerate, turning bad occasionally, at least 1 hour or up to 6 hours.
  2. Spray broiler rack with nonstick spray. Preheat broiler.
  3. Remove chicken from marinade; discard marinade.
  4. Place chicken on prepared broiler rack. Broil 7 inches from heat, turning, until chicken is browned and cooked through, about 25 minutes.
  5. Mix together couscous, orange segments, and currants in serving bowl. Serve with chicken.
Per Serving (1 piece chicken and about 3/4 cup couscous): 8 PointsPlus; 171 gm, 323 cal, 6 g fat, 40 g carbs, 9 g sugar, 5 g fiber, 28 g protein.


Crispiest Oven-Fried Chicken
Level: Basic - Prep: 15 min - Bake: 35 min - Servings: 6
Ingredients:
  • 1/3 cup fat free mayo
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp hot pepper sauce or to taste (or for me none at all - don't like spicy foods)
  • 3 (3/4 lb) bone-in chicken breasts, skinned and cut crosswise in half
  • 3/4 cup cornflake crumbs
Instructions:
  1. Preheat oven to 375 deg F. Spray jelly-roll pan with nonstick spray.
  2. Stir together mayo, mustard, garlic, salt, and pepper sauce in large bowl. Add chicken and toss to coat evenly.
  3. Put cornflake crumbs in a large zip-close plastic bag. Add chicken, once piece at a time, and shake to coat; place chicken in prepared baking pan.
  4. Lightly spray chicken with nonstick spray. Bake until golden brown and cooked through, about 35 minutes.
Per serving (1 piece chicken): 5 PointsPlus; 186 Cal, 4 g fat, 11 g Carbs, 0 g fiber, 26 g protein
